2023 Late Sky Pinot Noir
The 2023 growing season was a welcomed return to warm, uneventful (no hard freezes nor extreme heat, no wildfires), relative normalcy in the Willamette Valley. 201 cases were produced of this Pinot Noir that offers notes of soft stonefruits, rose and cinnamon. Cheers!
Production notes
Late Sky Pinot Noir is hand-harvested before the heat of the day and moved into the winery for sorting and processing the same day. The fruit is sorted twice— first as whole clusters and once more as de-stemmed berries. The majority of Pinot ferments are de-stemmed, with only about 10-15% whole cluster included on average in each vintage (wth the exception of our 2021 vintage). Once sorted thoroughly, the fruit is moved into stainless tanks to begin cold soak. The total length of time a tank is in cold soak varies from 3-5 days. All Pinot Noir is fermented dry with an average fermentation time of 21 days. Once complete, the free run wine is pumped into French oak barrels and moved into the barrel room. The wine will age on lees in French oak barrels for 11 months. Neutral barrels are primarily used in aging. An average of 30% new wood is introduced each vintage from Taransaud and François Frères cooperages. All Late Sky Pinot Noir is unfined and unfiltered in order to present the most true character of the site and vintage each year.
