2021 Late Sky 'Eclipse' Pinot Noir
The 2021 growing season was extremely dry and warm with heat spikes up to 116°F and five days of temperatures over 100°F. As a result, berries bloomed and ripened rapidly producing smaller, more concentrated fruit with lovely acidity. Only 10 barrels were produced of this limited whole-cluster Pinot Noir that offers notes of candied strawberry and rhubarb pie. Cheers!
Production notes
Late Sky Pinot Noir is hand-harvested before the heat of the day and moved into the winery for sorting and processing the same day. In 2021, the fruit was sorted and left intact as whole clusters. Once sorted thoroughly, the fruit was moved into stainless tanks to begin cold soak. The total length of time a tank is in cold soak varies from 3-5 days. All Pinot Noir is fermented dry with an average fermentation time of 21 days. Once complete, the free run wine is pumped into French oak barrels and moved into the barrel room. The wine will age on lees in French oak barrels for 11 months. Neutral barrels are primarily used in aging. An average of 30% new wood is introduced each vintage from Taransaud and François Frères cooperages. All Late Sky Pinot Noir is unfined and unfiltered in order to present the most true character of the site and vintage each year.
